Creamed Chicken on Rice

This is classic comfort food. Many children don't like onions it seems. If yours have strong opinions about onions, just leave them out. If you buy one of those rotisserie chickens now and then for dinner, this makes great use of the leftovers. If you don't have any leftover chicken, you can just poach 2 chicken breasts. (Put chicken breasts in a baking dish, cover tightly, and bake at 350 for 30 minutes or so. Do this the night before while you're eating dinner and make the next night's dinner super fast.)

1/4 cup butter
1/2 an onion, diced
1/4 cup flour
2 cups chicken broth
1 cup milk
salt and pepper to taste
2-3 cups cooked chicken, diced
1 Tbs parsley

Heat the butter in a saucepan until melted. Add the onion if you're using it and cook 5 minutes or so, until softened. Sprinkle the flour in and stir until incorporated, then cook a few minutes, stirring.

Add the broth and milk slowly, stirring to mix in each addition so the mixture doesn't get lumpy. Bring to a simmer and cook a few minutes, until thickened. Taste and add the salt and pepper, then add the chicken and parsley.

Heat through and serve over rice.

This also goes great over croissants or mashed potatoes or egg noodles or even just plain toast.
