Goldenrod Eggs on Toast

aka Hard-Boiled Eggs in White Sauce

I frequently hard boil eggs on the weekend for snacks or lunches. Sometimes we end up with some extra though and I discovered this easy supper recipe for a quick weeknight meal. I served it on toast but it would probably be equally good over rice.

6 hard boiled eggs
2 Tbs butter
2 Tbs flour
1 cup milk
salt and pepper to taste
cayenne to taste
buttered toast

Peel the hard boiled eggs and cut them in half, then chop up the eggs.

Melt the butter in a saucepan, mix in the flour with a whisk, cooking 2-3 minutes until it just lightly browns. Watch it carefully as you want it browned lightly but not burned.

Slowly whisk in the milk and cook a few minutes, stirring, until thickened. Season with salt, pepper, and cayenne. Mix in the chopped egg.

Make your toast and butter it. Spoon the sauce over the toast and serve.

Serve with Frog Eye Soup for a more substantial meal.
